Swedish Pancakes
Swedish Pancakes:

Rolled up like a maki roll:

We made Swedish Pancakes! Nothing says good luck on SATs (Joachim) and is perfect snack for watching movies about how sharks are being driven into extension (Chrissy). It was a sad night either way - SAT math...watching 90% of the world's former shark population decline.
In the past 6 days 1.5 million sharks have been murdered. Just so you know.
Anyways. Swedish pancakes made it a bit better.
They are very simple to make, they look like crepes!
Our Special Swedish Pancake Recipe:
- 3 eggs.
- 1 cup of four.
- 2/3 cup of milk
- 1/3 cup of yogurt drink/smoothie (we choose apple - for oomph)
1 spoon full of cinnamon mixed with white sugar
- a generous sprinkling of nutmeg and cinnamon
- a swig of sprite
You mix the batter all up in a blender to make is smooth. Then you pour a bit in a hot pan shifting the pan to make the batter expand and become thinner. The process is identicle to that of making crepes.
We took our crepes with either lingonberry jam or melted chocolate and bananas. I guess it shows our "cultural" differences.
They were the best.
